After harvest, these Arabica beans are transported to the Malabar coast where they are spread out in open warehouses and exposed to the moisture-laden monsoon winds for several weeks. The humidity slowly transforms the bean — swelling it, softening its acidity, and deepening its body into something bold, earthy and unmistakably full. It is one of the oldest and most unique coffee processing methods in the world, and it originated right here in India.
